One-Pot Creamy Orzo and Sausage

This is the easiest and perfect one-pot meal for the entire family. Completed customizable with what you have in your own kitchen. This recipe can have endless variations that are all as good as the one before it.

Ingredients

  • 1lb italian sausage
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1tsp dried parsley
  • 1/2 tsp crushed red pepper flakes
  • 1/2 c sun-dried tomatoes
  • 31/2 cups low sodium chicken broth
  • 1/2c butternut squash, grated
  • 2 tsp dijon mustard or sub 1 tsp dried mustard
  • 1lb dry orzo pasta
  • 1/2c heavy cream
  • 2 cups fresh spinach
  • grated parmesan for finishing

Instructions

  1. Place large non-stick skillet over medium heat. Add sausage and onion to pan. Brown sausage until fully cooked about 8 minutes. Add garlic, oregano, thyme, and crushed red pepper and allow to cook 2 minutes. Mix in sundried tomatoes and cook another 1-2 minutes.
  2. Add chicken broth, squash, mustard and orzo. Bring broth to a boil and cook until orzo is al dente, about 6 minutes. Make sure you stir ofter so the orzo does not stick to the pan.
  3. Add in heavy cream and spinach and stir together. Taste for seasoning. Add parmesan cheese for salt and more cheesiness. You can add as much or little of this as you want depending on your taste.
  4. Serve and Enjoy!
